Ingredients

For the soup
  • 1 lb ground beef 85% lean
  • 1 yellow onion medium, diced
  • 3 cloves garlic minced
  • 2 tsp Italian seasoning gluten-free
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 6 cups beef broth gluten-free
  • 8 oz lasagna noodles gluten-free, dried, broken into bite-size pieces
For the cheese topping
  • 1 cup ricotta whole-milk
  • 1 cup mozzarella shredded
  • 0.25 cup Parmesan grated

Equipment

  • 1 12-inch skillet
  • 1 6-quart slow cooker

Method

  1. In a 12-inch skillet over medium heat, cook the ground beef and onion for 6 to 8 minutes, breaking up the beef, until the beef reaches 160°F and the onion is softened.
  2. Drain excess fat.
  3. Stir the garlic, Italian seasoning, salt, and pepper into the skillet.
  4. Cook for 30 seconds.
  5. Transfer the mixture to a 6-quart slow cooker.
  6. Stir in the crushed tomatoes, tomato sauce, and beef broth.
  7. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours.
  8. In a medium bowl, stir together the ricotta, mozzarella, and Parmesan.
  9. About 15 minutes before serving, cook the lasagna noodles in a pot of boiling water according to the package directions until tender.
  10. Drain the noodles.
  11. Stir the cooked noodles into the soup.
  12. Serve each bowl with a dollop of the cheese topping.

Notes

For the best texture, cook the noodles just before serving and store leftovers in the refrigerator for up to 4 days; freezing is possible, but the noodles may soften, so freeze the soup without them when practical. Use dairy-free ricotta, mozzarella, and Parmesan alternatives for a dairy-free topping.
